  • This is not the first time we have had a bottle on the podcast from Savage and Cooke
  • We had their bad sweater on about a year ago. 
  • Sad news is that they have changed their bottle for their products
    • Just clear glass, but same shape
    • The matte black was better in my mind. 
  • The Burning chair was the first, anticipated, release from David Phinney for his whiskey company. 
  • David Phinney is a winemaker, a highly acclaimed winemaker at that. 
    • Creator of Orin Swift Cellars
    • Best known for his creation: The Prisoner 
  • Now, while David is a great winemaker, he is not so much a distiller of whiskey. 
    • He sources from Indiana, Kentucky, and Tennessee
    • Blends them, with the youngest going in at 4 years old
    • Finishes them in used barrels from his Napa Valley Cabernet projects
  • Mashbill:
    • Technically it is a high rye mashbill
    • 75% corn 21% rye and 4% Malted Barley
  • Barrel picks
    • They do some interesting private picks
    • They allow people to pick the wine barrels they are finished in and what percentage from those barrels are used in the blend for the final product
    • They also allow them to pick the proof
